Sweet Potato Apple Hash

I love breakfast hashes.  I actually love pretty much anything containing potatoes, but breakfast hashes are especially my favorite.  I used to buy bags of frozen Potato O’Brien and make them as a special Saturday morning treat for myself.

French Onion Soup

I’m struggling with how to start this post. I just want to repeat “I love french onion soup” over and over, but you still probably won’t understand how much I love it. If I’m at a restaurant that serves french onion soup, I’ll either order it or be depressed until I can go back and order it.

Butternut Squash Baked Vegetarian Taquitos

Most Mexican places have vegetarian options. Cheese enchiladas, bean and cheese burritos, stuff like that. What I never ever ever see is vegetarian taquitos. It’s a shame because taquitos are basically fried tortillas around (meat) stuffing and it sounds quite delicious.

Smoky Corn Soup

I’ve been a little obsessed with corn. I’m not sure why, because I’ve never really been a huge corn fan. Yet for some reason, when I went to the grocery store the other day and I saw fresh corn, I couldn’t stop putting more and more in my basket.

Empanadas

I have a confession for you.  I’ve never actually had an empanada.  It seems like something I’d love, right?  Delicious goodies baked in a pocket of love and bread.  It’s right up my alley!  Somehow, I just never had one.

Mac and Cheese

My boyfriend is away this week house sitting for some friends. Normally when he’s gone for an evening working at the hospital or out with friends, I like the time to catch up on my girly shows and eat whatever I want. But a whole week?! We’ve done long distance before (1 1/2 years total between study abroad and school schedules not matching up), but it’s never fun. When I was deciding what to make this week for dinner,

Miso Soup

As you may have guessed, I’m REALLY picky.  I pretty much assume anything I don’t like must be gross.  Typically, I’m wrong.  The most egregious error I’ve made due to my pickiness was assuming that all soups were gross.
