Sweet Potato Apple Hash

I love breakfast hashes.  I actually love pretty much anything containing potatoes, but breakfast hashes are especially my favorite.  I used to buy bags of frozen Potato O’Brien and make them as a special Saturday morning treat for myself.

Sweet Potato Apple Hash

Then one day I had a lone potato and I realized I could make them myself.  I have no idea why I never realized I could easily make my special treat fresh for about a quarter of the price of buying it frozen.  Sometimes it takes a little while for obvious things to click in my head.  Luckily this meant that sweet potato apple hash was born.

DSC_4808 edit web editThis particular recipe is a breakfast hash with leftovers I had that needed to be used up.  I wasn’t sure how the apples would taste in the hash, but it was so good.  I’m definitely going to be making this breakfast sweet potato apple hash again…and again..and again…

Sweet Potato Apple Hash

Inactive Time: 20 minutes

Total Time: 25 minutes

Yield: 2

Sweet Potato Apple Hash


  • 1 Tbsp olive oil
  • 1 sweet potato
  • 1 apple
  • 1/4 onion
  • 1 tsp thyme
  • 1/4 tsp paprika
  • salt and pepper to taste


  1. Chop the sweet potato and onion.
  2. Peel and core the apple and then chop.
  3. Heat the olive oil in a large pan to medium low heat.
  4. Add the sweet potato, thyme, and paprika and cover.
  5. Stir occasionally to prevent burning.
  6. Once the sweet potato is almost fork tender, add the apple and the onion.
  7. When the apple and the sweet potato are both soft, remove from heat.
  8. Sprinkle with the salt and pepper and serve.


If desired, you can add bacon. Simply cook the bacon prior to the sweet potatoes and then cook the rest of the dish in the bacon fat. Add the bacon back in at the end.
