Cinnamon Honey Peach Waffles | hollyshelpings.com Do you ever get distracted in the grocery store? I do that a lot. If I don’t have a list, I’m all over the place. “Oooo….apples are on sale! Did we need more butter? I better get some just in case. Oh! I love cream cheese, let’s get some.” I decided to make waffles and I felt that way. What kind of waffles should I make? Google was no help. They only have MORE ideas for waffles. I finally decided on cinnamon honey peach waffles (ok, fine. It wasn’t really a decision, but more of a combination of ingredients). My mom says I used to do this with stuffed animals. Apparently “Heart Rainbow Sparkle Heart Love” was not an unusual name for my stuffed critters. Cinnamon Honey Peach Waffles | hollyshelpings.com I decided to make waffles for two reasons. First off, I love breakfast. You should be suspicious of anyone that doesn’t love breakfast. Secondly, I have an waffle maker that my awesome boyfriend pointed out was currently untouched and needed to be utilized. I was just moving to Arizona and my mom was giving me free stuff. We’ve already talked about my love of anything free here, so I couldn’t resist (as a side note, I also got the peaches for free from my office).  I love waffles!  Why not accept the waffle maker my mom offered?  I’ll tell you why: because they’re heavy and they sit unused taking up precious cupboard space.  My boyfriend wanted me to make use of this ignored kitchen appliance and make tasty waffles (I admit I did have to unbury it from the tupperware that had overtaken it and wipe off a thick layer of dust….it was gross). Cinnamon Honey Peach Waffles | hollyshelpings.com I regret nothing.  These cinnamon honey peach waffles were perfectly fluffy, sweet, and delightful.  These are the perfect waffles with an amazing combination of sweet and spicy.  I took one bite of these waffles and knew that I needed to keep the waffle maker out because I was going to be making these a lot.  I topped these with a combination of peaches, honey, and a little cinnamon and it made them even more delicious. Cinnamon Honey Peach Waffles

Active Time: 20 minutes

Total Time: 20 minutes

Yield: Makes 12 Servings

Cinnamon Honey Peach Waffles

  • 1 cup whole wheat flour
  • 1 cup white all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 tsp salt
  • 1 teaspoon cinnamon (plus extra if making topping)
  • 1/3 cup vegetable oil (I had to substitute peanut oil because of what I had.  It worked fine)
  • 1-1/4 cup milk
  • 2 eggs
  • 1-1/2 tablespoon honey (plus extra if making topping)
  • 1 peach (over ripe is fine)

  1. Preheat the waffle iron.  Mix all the dry ingredients together (whole wheat flour, all-purpose flour, baking powder, salt, and  cinnamon).  In a separate bowl, whisk together all the wet ingredients (vegetable oil, milk, eggs, honey).
  2. Combine the wet ingredients and the dry ingredients and mix until just wet.  The mixture should still be slightly lumpy.
  3. Finely chop 1/2 of the peach reserving any extra for toppings.
  4. Fold in the peaches carefully.  Scoop out the mixture into the waffle iron until there is no more remaining.

Keep warm in an oven or eat immediately.  If you stack them while making more (or waiting around for something else), the heat they give off will make them soggy and less delicious.
